when you have two children literally clawing at your legs between 4:30 & 5:30pm, making dinner is not always an easy option.
you know, we could always throw top ramen and/or macaroni on the stove, but i have been working really hard to make healthy choices for our family.
i need something quick. i need something easy. i need something healthy.
which is why i love this blog.
for the most part, these recipes take less than an hour & fill our tummies with healthy & delicious food.
this week, i made chicken fried rice.
i would say the most fattening part of the entire recipe is the 1/4 cup of soy sauce & i make sure to use the trader joe's low sodium brand.
the only change i make is that i use coconut oil instead of grapeseed oil to make it a little bit more heart conscious. :) good news: you can't even tell a difference.
IT WAS SO GOOD. eat it tonight. i promise you won't be let down.
also i threw a 30th birthday party this month and made these delightful brown butter sea salt cookies for favors. they were amazing, i could not stop being tempted by them. i just tucked them in a little glassine bag & sealed it with a piece of washi tape. cutest & easiest & most delcious favor! i will make these again & again.
